اثر جایگزینی سطوح مختلف سویای پرچربی با کنجاله سویا بر خصوصیات لاشه، اکسیداسیون چربی و کیفیت گوشت بره‌های پرواری زل

چکیده

هدف از انجام این پژوهش بررسی اثر سطوح متفاوت جایگزینی سویای پرچربی با کنجاله سویا بود. در این پژوهش درصد متوسط ­رشد روزانه، مقدار مصرف خوراک، ضریب تبدیل خوراک، درصد نرخ­ وزن ­نسبی، درصد نرخ رشد ویژه، خصوصیات لاشه،کیفیتگوشتومیزاناکسیداسیونچربیعضلهراسته در بره­های پرواری زل اندازه‌گیری شد. بره‌ها دارای میانگین سن شروع پرواربندی سه ماهگی و وزن شروع پرواربندی 1/0±44/19 کیلوگرم بودند. در 14هفته آزمایش (دو هفته عادت‌پذیری و 12 هفته پرواربندی)، بره­ها به چهار تیمار (به­ترتیب دریافت­کننده صفر، 33، 66 و 100 درصد جایگزینی سویای پرچربی با کنجاله سویا)و هر تیمار با پنج تکرار تقسیم شده بودند. نتایج نشان داد که درصد متوسط ­رشد روزانه، درصد نرخ­ وزن ­نسبی و درصد نرخ رشد ویژه با افزایش درصد سویای پرچربی افزایش یافت. در پایان آزمایش، 12 بره (سه بره از هر تیمار) کشتار شدند و در تفکیک لاشه با افزایش مقدار سویای پرچربی جیره، وزن ­نیم ­لاشه، قلب، کبد، معده­ چهار قسمتی، سر دست، ران و نسبت سردست و ران به لاشه افزایش معنی­داری نشان داد. همچنین کیفیت مزه، مقبولیت کلی و بافت گوشت بهبود پیدا کرد (05/0>p ). با افزایش مدت زمان نگهداری عضله راسته در سردخانه (یک و دو ماه)، میزان اکسیداسیون چربی گوشت به‌ طور معنی‌داری کاهش یافت (05/0>p ). نتایج این پژوهش نشان داد که استفاده از سویای پرچربی سبب افزایش شاخص‌های عملکردی رشد در بره­ها شد و همچنین میزان اکسیداسیون را کاهش و شاخص‌های کیفیت گوشت در مدت زمان نگهداری در سردخانه را بهبود بخشید.

چکیده [English]

The aim of this study was to investigate the effect of different levels of replacement of full fat soybean meal with soybean meal. In this study, the average daily growth rate, feed intake, feed conversion ratio, relative weight rate, specific growth rate, carcass characteristics, meat quality, and fat oxidation rate of roast muscle were measured in Zel fattening lambs. The lambs had a mean age of three months at the initiation of fattening and a weight of 19.44±0.1 kg. At 14 weeks of experiment (two weeks of habituation and 12 weeks of fattening), the lambs were divided into four treatments (0, 33, 66 and 100% high fat soybean meal replacement, respectively) and each treatment with five replicates. The results showed that the average daily growth rate, relative weight percentage and specific growth rate increased with increasing soybean percentage. At the end of the experiment, 12 lambs (three lambs from each group) were slaughtered and in carcass dissection, weight, carcass, heart, liver, four parts stomach, the hands, thighs and the shoulder and hip carcass showed significant increase by increasing the amount of soybeans diet. Taste quality, overall acceptability and meat texture were also improved (p < /em><0.05). By increasing the shelf life of the shelf muscle (one and two months), the oxidation rate of meat fat was significantly reduced (p < /em><0.05). The results of this study showed that the use of high-fat soybean increased the growth performance indices in lambs and also reduced the oxidation rate and improved the meat quality indices during cold storage.
